Kot zelenjava je bil zelo popularen v 17em stoletju. Mlade listi se pripravi kot špinačo. Posušen je začimba ali dodatek cajnim mešanicam.

BLUE LADY'S MANTLE

Lady's mantle has a long history of herbal use as an external treatment for cuts and wounds and internally in treatment of diarrhoea and various women's ailments, especially menstrual problems.

Young leaves are edible raw or cooked and have a dry, somewhat astringent flavour. They are mixed with leaves of Polygonum bistorta and Polygonum persicaria when making a bitter herb pudding called Easter ledger which is eaten during Lent. The leaves are used commercially in the blending of tea. Roots are edible cooked.

Mediteranska zdravilna in okrasna rastlina. Sladica, pripravljena iz korenine, se je bila znana že v starem Egiptu in se je do danes razvila v marshmallow. Egipčanska verzija je sladkana z medom in tudi blaži vneto grlo. Francoska verzija, pâté de guimauve, vsebuje stepen jajčni beljak in rožno vodo za okus. Za Rimljane je bil ajbiš zelenjava in ena od delikates. Mnogi revnejši prebivalci stare Sirije - predvsem Felahi, Grki in Armenci - so dolga obdobja jedli samo zelenjavo, predvsem ajbiš in sorodne vrste.

Korenine je potrebno prekuhati, nato se jih lahko s čebulo popeče na maslu. Koreninski ekstrakt (halawa) je ena od arom sladice Halve. Cvetovi in mladi listi so tudi užitni in jih lahko primešate v solate, skuhate ali ocvrete.

Cela rastlina, prevsem pa korenine, vsebujejo sluzi, vsi deli so zdravilni. Ime prihaja zaradi zdravilnih lastnosti iz grščine altho = zdraviti. Listi nabrani poleti pred cvetenjem zdravijo bolezni dihal in izločal (uretitis in ledvične kamne). Jeseni nabrana korenina deluje proti prebavnim in kožnim težavam: vnetja v ustni votlini, gastritis, peptični čir, enteritis, kolitis. Drugi učinki: povečuje tvorbo materinega mleka, sprošča bronhije, deluje proti zaprtju in proti sindromu nemirnega črevesja. Zunanje se korenino uporablja proti krčnim žilam, žuljem, abcesom in turom. Cvetovi in mladi listi so v mnogih recepturah kozmetike za kožo.

MARSHMALLOW

Mediterranean medicinal and ornamental plant. A confection made from the root since ancient Egyptian time evolved into today's marshmallow. The Egyptian version is honey-sweetened and also treats sore throat. The French version, pâté de guimauve, includes an eggwhite meringue and is flavored with rose water. For the Romans it was a vegetable and one of their delicacies. Many of the poorer inhabitants of ancient Syria - especially the Fellahs, Greeks and Armenians - subsisted mostly on herbs, of which Marsh Mallow was one of the most common.

The roots are boiled and then fried with onions and butter. The root extract (halawa) is used as flavouring in the making of a middle eastern snack halva. Flowers and young leaves are edible and are added to salads or are boiled and fried.

The whole plant, particularly the root, abounds with a mild mucilage, all parts of the plant have medicinal properties. The name is derived from the Greek altho = to cure, for its healing properties. The leaves, collected in summer as the plant begins to flower are used in ailments of the lungs and the urinary systems (urethritis and kidney stones). The root , harvested in late autumn, is used for digestive and skin problems: inflammations of the mouth, gastritis, peptic ulcer, enteritis, and colitis. It increases the flow of breast milk, soothes bronchial tubes, treats constipation as well as irritable bowel syndrome. Externally the root is used in treating varicose veins, ulcers, abscesses, and boils. The flowers and young leaves are used in many recepies for skin cosmetics.

Aromatični listi in cvetovi so sestavina različnih čajnih mešanic. Z mladimi poganjki se lahko začini sladice in narastke. V Italiji ga uporabljao kot kuhinjsko zelišče. Ime ima po grški boginji Artemidi.

Medicinal plant that remedies indigestion and gastric pain, antiseptic, febrifuge. A tea relieves pain of childbirth. A dried and encapsulated form is used as an anthelmintic.

The pungent, scented leaves and flowers are used in herbal teas. Young shoots are used to flavor pastries and puddings. In Italy it is a culinary herb. Named for the Greek goddess Artemis.

V glavnem v Nemčiji jo uporabljajo za začinjanje majskega vina (Maiwein / Maibowle), piva (Berliner Weisse), vinjaka, klobas, želeja, džemov, brezalkoholne pijače Tarhun, sladoleda, šerbeta in čaja z blagim sproščujočim učinkom. Ime prihaja iz jezika Nahuatl chilli, doma so v obeh Amerikah. Samo nekaj vrst je pogostih v uporabi, zato pa obstaja mnogo kultivarjev in načinov obdelave, ki imajo različna imena.

V Amerikah so del prehrane že vsaj od 7500 pr. n. št. Po Kolumbovem odkritju Amerik so feferoni obšli svet kot hrana in zdravilna zelišča. Diego Álvarez Chanca, zdravnik na kolumbovem drugem potovanju, je prinesel prve čilije v Španijo in opisal njihove zdravilne učinke leta 1494. Čiliji so sestavina skoraj vseh karijev in številnih drugih jedi. Snovi, ki jih naredijo pekoče so kapsaicin (8-methil- N -vanilil-6-nonenamid) in sorodne spojine imenovane kapsaikinoidi. Kapsaikin je glavna sestavina poprovega spreja. Ob zavžitju se kapsaikinoidi vežejo z bolečinskimi receptorji v ustih in grlu. Receptorji pošljejo v možgane signal, da je oseba pojedla nekaj vročega. Možgani se odzovejo tako, da povišajo srčni utrip, znojenje in nivo endorfinov.'Pekočino' čilijev merimo v Scovillovih enotah (SHU). CHILI PEPPER / CHILLI

The name is derived from from Nahuatl chilli, they originate in the Americas. There are only a few commonly used species, but there are many cultivars and methods of preparation that have different names.

They have been a part of the diet in the Americas since at least 7500 BC. After the discovery of the Americas by Columbus peppers spread across the world as food and medicine. Diego Álvarez Chanca, a physician on Columbus' second voyage brought the first chili peppers to Spain and wrote about their medicinal effects in 1494. Chilli is an ingredient in almost all curries and many other recipes. The substances that give them their 'sting' are capsaicin (8-methyl- N -vanillyl-6-nonenamide) and related chemicals called capsaicinoids. Capsaicin is the main ingredient in pepper spray. When consumed, capsaicinoids bind with pain receptors in the mouth and throat. These receptors send a message to the brain that the person has consumed something hot. The brain responds by raising the heart rate, increasing perspiration and release of endorphins. The 'heat' of chili peppers is measured in Scoville heat units (SHU). Bell peppers rank at 0 SHU and the hottest chili is Naga Viper pepper at 1,359,000 SHU (a modern cultivar derived from naga jolokia from northeastern India, 1M SHU). Pure capsaicin measures 16M SHU. Red chilis contain high amounts of vitamin C and carotene (provitamin A), are a good source of most B vitamins, B6 in particular, potassium, magnesium, and iron. Their high vitamin C content also increases the uptake of iron from other foods such as beans and grains. A lot of yellow and green chilis are essentially unripe fruit.

As a herb a powder made from dried leaves and is used as a seasoning in oriental dishes.

Lemon grasses contain active ingredients like citral, myrcene (antibacterial and pain reliever), citronella, citronellol and geranilol. The oil is separated from water by steam distillation of the freshly cut leaves or can be extracted using alcohol. This makes organic lemon grass oil and Negros Oil (mixture of lemon grass and virgin coconut oil) used in aromatherapy. Hydrosol or Hydrolat, a by-product of the distillation process, is a pure natural water or plant water essence used for the production of skin care products (lotions, creams) and its pure form is a facial cleansing toner.

Doma je v Evropi in JZ Aziji. Privablja številne divje vrste čebel. Native to Europe and southwestern Asia. It attracts a number of wild bees. Ima veliko zdravilnih lastnosti in jo v številnih deželah pripravijo tudi kot okusno solato. Ima značilen, rahlo pekoč okus. Za čaj bogat z vitaminom C se svežo zel namoči v vročo vodo. Lahko jo dodate v enolončnice. Sasi so jo uporabljaji pri varjenju piva namesto hmelja, za bistrenje in konzervans; od tod pivarska imena kot sta npr. Alehoof in Tunhoof. V izdelavi sira za vegetarijance je nadomestek živalskega sirila. Grenkuljica je prisotna v tradicionalni medicini Evrope že več tisoč let. Galen jo proporoča proti vnetjem oči. John Gerard jo priporoča proti zvonenju v ušesih, pri boleznih ledvic, proti zaprtju in kot pljučno zel. Med drugimi tradicionalnimi uporabami so: zdravljenje bronhitisa, splošni tonik pri prehladih in kašljih in za sproščanje zamašenega nosa. Esencialno olje vsebuje mnoge sestavine z dokazanim močnim zdravilnim učinkom; med drugim take, ki delujejo pred nastankom čirov, delujejo proti-vnetno ali, kot ursolična kislina, ki deluje proti-virusno proti Epstein-Barr-ovem virusu.

The fresh herb can be steeped in hot water to create a tea rich in vitamin C. It can be cooked as a pot herb. It was used by the Saxons in brewing beer as flavoring, clarification and preservative; thus the brewing-related names like Alehoof, Tunhoof. It can used in vegetarian-safe cheese-making as a substitute for animal rennet. Ground ivy has been used in traditional medicine of Europe for thousands of years. Galen recommended it to treat inflammation of the eyes. John Gerard recommended the plant to treat tinnitus, kidney diseases, against indigestion and as a lung herb. Other traditional uses are to treat bronchitis, as a general tonic for colds and coughs and to relieve congestion of the nose. The essential oil has many components with potent medicinal properties, among others protecting against formation of ulcers or anti-inflammatory properties or, like ursolic acid, to have antiviral activity against the Epstein-Barr virus.

V naravi raste v južnih delih Kitajske, Korejskega polotoka in Japonske. Zelo dobro znana rastlina v tradicionalnem Kitajskem zeliščarstvu.

Jiaogulan se najpogosteje pripravi kot čaj. Je močan adaptogen in antioksidant, ki znanstveno potrjeno regulira krvni pritisk, znižuje holesterol, izboljšuje vzdržljivost in tako podaljšuje življenje. Domačini rastlino imenujejo 'zel nesmrtnosti', saj ljudje v provinci Guizhou, kjer ta čaj redno pijejo, doživijo visoko starost. Rastlino imenujejo tudi 'južni ginseng', saj so med njenimi kemijskimi sestavinami tudi triterpenoidni saponini gipenozidi, ki so strukturno sorodni ginsenoidom iz dobro znane zdravilne rastline ginseng. Jiaogulan ima tudi pomirjujoč učinek in v kombinaciji s Codonopsis pilosula dobro deluje proti letalski in višinski bolezni.

Jiaogulan is most often consumed as an herbal tea. It is a powerful adaptogen and antioxidant that has been found effective in regulating blood pressure, lowering cholesterol, improving endurance and thus increasing longevity. It is described by the local inhabitants as the 'immortality herb', because people within Guizhou Province, where jiaogulan tea is drunk regularly have a history of living to a very old age. It is also referred to as 'Southern Ginseng', as its chemical constituents include the triterpenoid saponins gypenosides which are closely structurally related to the ginsenosides from the well-known medicinal plant ginseng. Jiaogulan also has calming effects and is useful in combination with Codonopsis pilosula for jet lag and altitude sickness.
